Blueberry Chocolate Parfait
A super-food and super-easy decadent treat! Cacao and blueberries combined with coconut milk whipped cream - go ahead and indulge!

Chocolate Layer
- 1 avocado pitted
- ½ cup unsweetened almond milk
- 2 tbsp. date syrup or sweetener of choice
- 1 tbsp. cacao powder or unsweetened cocoa
- 1 tbsp. coconut oil melted
- Coconut Milk Whipped Cream Layer
- 1 can 14oz. full-fat coconut milk, refrigerated for 6 to 12 hours
- 1 tbsp. date syrup
Blueberry Layer
- 1 cup fresh blueberries
- Cacao Nibs - optional topping
Chocolate Layer
Combine avocado, almond milk, date syrup and cacao powder in blender.
Blend until smooth. Add melted coconut oil and blend until smooth.
Coconut Milk Whipped Cream Layer
Open the chilled refrigerated can of coconut milk and discard any liquid.
Place the thick coconut cream in a mixing bowl and mix until fluffy.
To assemble parfait:
Start with a layer of blueberries.
Add the chocolate pudding mixture onto the blueberries.
Top with whipped cream and cacao nibs.
