Colorful Cabbage Salad!

- 1 cup cooked quinoa
- 1 can chickpeas drained and rinsed
- ½ head Napa cabbage
- ½ head purple cabbage
- 1 cup chopped kale
- 1 whole red bell pepper chopped
- 1 whole green bell pepper chopped
- 3 whole banana peppers chopped
- 1 bunch cilantro chopped
- 3 whole scallions sliced
- 3 whole cucumbers diced
- 1 cup fine cut carrots
Dressing
- Juice of 1 lime
- ½ cup extra virgin olive oil
- ⅓ cup coconut aminos or gluten-free soy sauce
- ¼ cup rice wine vinegar
- 1 to 2 teaspoons ground ginger
- dash of garlic salt
Cook quinoa according to instructions.
Chop all the vegetables and place in a VERY large bowl.
Add cooked quinoa and chickpeas to vegetables.
Whisk together all the dressing ingredients.
Pour dressing over salad or top with dressing as you serve. Enjoy!
